Shrimp Ceviche

Ingredients:

  • 25 Raw shrimp, frozen is fine

  • 4 Lemons 

  • 3/4 cup White Onion diced

  • 3/4 cup Tomato diced and deseeded

  • 3/4 cup cucumber skin removed, deseeded, diced

  • 3/4 cup Cilantro chopped

  • 1/2 Jalapeño minced

  • 1 tbsp ketchup

  • 1 package of tostadas

  • Salt to taste

  • Mayonnaise to taste

Method:

  • Thaw and devein shrimp if necessary

  • Juice the lemons remove seeds into a separate bowl

  • In an additional separate bowl add the onion, tomato, cucumber, cilantro and Jalapeño

  • Cut the shrimp into bite size pieces

  • Add the shrimp to the lemon juice bowl

   The lemon juice will "cook" the shrimp

  • Make sure the shrimp are completely covered in lemon juice for 15 mins

  • Add the contents of the other bowl to the shrimp lemon juice bowl

  • Add 1 tbsp of ketchup and mix well

  • Taste and season with a bit of salt if necessary

  • Leave all the ingredients in the bowl for an additional 15 mins

To Serve:

​Take one tostada, place a smear or light layer of mayonnaise on top.  Using a slotted spoon add as much ceviche on top as you like. Garnish with additional cilantro or just enjoy!
